Ingredients (for 12 small and 6 big muffins):
80 g flaxseed flour (find it here)
30 g coconut flour
30 g hazelnut flour
1 egg
3 overripe bananas
300 ml kefir (or water or milk of choice)
1 tsp of cinnamon
1 tsp vanilla powder
1 tsp ginger powder
1 tsp chia seeds
a pinch of salt
1/2 baking soda
1 tsp baking powder
Process:
1. Combine all dry ingredients (flours, cinnamon, salt, baking soda and powder).
2. Mix all wet ingredients in a puree (with a fork or a hand mixer).
3. Combine wet and dry ingredients and wait for at least 10 min. for the dough to set.
4. Preheat the oven to 180°C.
5. Bake muffins for around 40-45 min. at 175°C. They’ll keep for 4-5 days.

Sestavine (for 12 majhnih in 6 velikih muffinov):
80 g lanene moke (najdete tu)
30 g kokosove moke
30 g lešnikove moke
1 jajce
3 zelo zrele banane
300 ml kefirja (ali vode ali mleka po izbiri)
1 žlička mletega cimeta
1 žlička vanilije v prahu
1 žlička ingverja v prahu
1 žlička chia semen
ščep soli
1/2 žličke sode bikarbone
1 žlička pecilnega praška
Priprava:
1. Zmešaj med sabo vse suhe sestavine (moke, začimbe, cimet, sol, sodo in pecilni prašek).
2. V tekočo zmes zmešaj med sabo vse mokre sestavine (z vilicami ali mikserjem).
3. Združi moke in suhe sestavine med sabo ter počakaj vsaj 10 min., da suhe sestavine vpijejo mokre.
4. Segrej pečico na 180°C.
5. Peci muffine 40-45 min. na 175°C. Primerno shranjeni bodo počakali 4-5 dni.
